Simple & Healthy Vegan Cheesy Potatoes by the Blueprint was a favorite of our kids growing up. It is also another recipe that you can make for two days as it still tastes good reheated the next day.
As far as the ingredients and amounts it is totally up to you. I love basil and put a lot of it in almost every recipe. The combination of onion powder and garlic powder can help reduce the amount of salt you use as it helps make things taste salty.
For the vegan sour cream, we like the tofutti brand the best, but there are plenty other brands to use, just find the one you like the best. You don’t need much. A little goes a long way and if you use too much your cheesy potatoes will end up too mushy and will taste a little off.
If you choose to use veggie bacon strip, know that the ones from Morningstar Farms have Milk and egg whites listed as ingredients.
Ingredients
- 6-10 potatoes (depending on the size of your family)
- Vegan cream cheese
- Vegan shredded cheese
- Vegan bacon strips
- Vegan milk (soy, almond, etc.)
- 1-2 tsp of chives
- 1-2 tsp of basil
- 1-2 tsp onion powder
- 1-2 tsp of garlic powder
- paprika (sprinkle on top)
- parsley (sprinkle on top)
Directions
- Wash and poke holes in potatoes.
- Place on cookie sheet or other oven save container.
- Bake at 375 degrees for 45-60 minutes until done. You can check the tenderness by poking with a fork until the potatoes are soft.
- Take potatoes out of oven and let cool slightly, until you can touch them.
- Cut potatoes in half the long way and carefully scoop out potato from skin with a spoon.
- Place potatoes in bowl setting the skins for later.
- Add milk, cream cheese, some of the shredded vegan cheese, chives, basil, onion and garlic powder to potatoes and mix using a mixer or mash thoroughly using a potato masher.
- Scoop the potato mixture back into the skins. You can pile it high to over flowing in each skin.
- place more shredded cheese on top of each potato.
- Sprinkle a little paprika and parsley on top of each potato.
- Cut the vegan bacon strips in half if you use smaller potatoes and place one on each potato.
- Place back on your baking sheet and bake at 375 degrees for 15 more minutes.
- Eat.
