Simple & Healthy Homemade Vegan Rosemary Bread

Simple & Healthy Homemade Vegan Rosemary Bread is an incredibly light, incredibly tasty bread. A nice, simple tasty treat that is satisfying to the palate. It’s vegan! It’s great with soup or just simply eaten alone with vegan butter.  You can also add to its presentation by baking it in different pans.

Simple & Healthy Homemade Vegan Rosemary Bread Ingredients

  • 4 cups bread flour
  • 2 teaspoons Himalayan salt
  • 1 teaspoon active dry yeast
  • 1 tablespoon fresh finely chopped rosemary
  • 2 cups room temperature filtered water
  • 1 tablespoon melted butter (Vegan)
  • 1 teaspoon flaky sea salt for on top
  • 2 teaspoons finely chopped fresh rosemary for on top

Simple & Healthy Homemade Vegan Rosemary Bread Directions

Combine the bread flour, salt, yeast and rosemary in a large bowl. Make a hole in the center and add the water. Mix all flour is incorporated. The dough should be wet and sticky.

Cover the bowl with plastic wrap and leave to rise at room temperature overnight or for up to 12 hours.

After 8-12 hours, the dough will have risen, but it may still look rough and its surface will be covered with bubbles. Line a bread pan with parchment paper. Preheat the oven to 425ºF.

Spread a generous amount of flour (1/4 cup) on a work surface. Dump the dough out onto the floured surface and turn it several times to coat with flour. Knead the dough for one minute, adding more flour to the work surface as needed. You can divide the dough into 2 or 3 fairly equal portions if you want smaller loaves, turn each piece in the flour to coat.

Shape the loaf into a ball, pulling edges under and pinching together to make a smooth rounded top. Place in prepared bread pan, smooth side up. If the dough is sticky as you’re shaping, just roll in more of the flour.

Brush each loaf all over with melted vegan butter such as Earth Balance. Sprinkle generously with finely chopped rosemary and sea salt.

Allow bread to rise for about 20 minutes while the oven is preheating. Don’t worry if the dough flattens a little while it’s resting. It will puff up nicely in the oven.

Transfer pan to the oven. Bake 20-30 minutes or until nicely golden brown. Transfer bread to a cooling rack to cool completely.

If making to store, remove from oven about 5 minutes early, when it is a pale golden brown. Cool completely, then freeze on a baking sheet. Once frozen, transfer each loaf to a large Ziplock bag and store in the freezer. To serve, allow bread to thaw, then heat for 8-10 minutes at 325˚F or until nicely golden brown.

Note: Yeast breads should not be eaten right away. Allow bread to rest for 48-72 hours. This allows the yeast to evaporate from the bread.
