Simple & Healthy Instant Pot Curried Greens
Simple & healthy instant pot curried greens is one of our favorite vegetable dishes. It is a simple, healthy recipe that follows the blueprint laid out by God for healthy eating. Add more of the spices listed if it isn’t up to your taste.
Ingredients (Simple & Healthy Instant Pot Curried Greens)
- 1 large bag of precut greens (we like to use several kinds: mustard, collard, turnip, etc.).
- 1 can coconut milk
- 2 cups of water
- 1 TBSP ginger powder
- 1 tsp minced onion
- 1 TBSP of onion powder
- 2Â tsp curry powder
- 1 TBSP of garlic powder
- 3 cloves garlic
- 1 TBSP Himalayan or Sea salt (adjust to taste)
Directions (Simple & Healthy Instant Pot Curried Greens)
Add the first three ingredients into the instant pot. You can press the greens down to fit more into the instant pot as they will shrink when cooked.
Now add the garlic cloves and minced onion and stir.
Next lock the lid in place and set the valve to “sealing”. Press the “pressure cook” key and adjust to “high pressure”. Set the timer to 30 minutes. It may take about 10 minutes to come to pressure.
After the 30 minutes are up, manually release the steam valve. Be careful, it will be very hot, and some water may sputter out. Once the steam releases and the valve floats down, you can open the Instant Pot. If you’re not in a hurry, allow the Instant Pot to release the pressure naturally. This will take an additional 20 using the NPR (natural pressure release).
Finally, give the greens a stir. Add remaining ingredients. Adjust flavor as needed, adding more salt or curry powder for intense flavor. Serve along with pinto beans, wild rice, and cornbread and enjoy!Â

Plus, greens are an excellent source of vitamin A, vitamin C, and calcium, vitamin K, potassium, folate, iron, vitamin B-6, and magnesium. ***For health reasons we no longer use animal milk. Coconut milk is an ‘equivalent’ and is considered a neutral fruit like olives; and since you are just using the juice, it can be used with vegetables.***
