Simple & Healthy Vegan Enchiladas by the Blueprint
Simple & Healthy Vegan Enchiladas by the Blueprint are easy and super delicious to make. The enchiladas are stuffed with beans and mixed with pourable cheese sauce that is bursting with flavor making it both nutritious and very satisfying. They make a great healthy family dinner the whole family can enjoy!
Ingredients
- 2-3 cans of mixed beans (or any bean you have) black beans, pinto beans, northern beans, etc.
- Whole Grain Tortillas
- 1 10oz. can of Medium Enchilada sauce mixed with 1 8oz. can of tomato sauce
- Black Olives
- 1 bell pepper
- Vegan Cheese
Directions
In a medium- sized pot, heat up 1-2 cans of Bush’s Best Pinto & Great Northern Mixed Beans. Cook for 5-6 minutes or until heated through. Drain most of the bean liquid -leaving a little. Prior to heating up the beans make your Simple & Healthy pourable cheese, or you can also use shredded vegan cheese.
Pour some of the cheese mixture into beans. *If you’re using store bought vegan shredded cheese, mix some of it with the beans gradually stirring until the cheese melts.
Scoop out roughly a 1/2 cup bean/cheese mixture and place it down the center of each tortilla. Roll it up tightly, and place seam-side down in the prepared baking dish. I line mine with parchment paper, or you can also place some of the sauce on the bottom, so it doesn’t stick.
Top with enchilada sauce or tomato sauce along with the rest of the pourable vegan cheese that you made or vegan shredded cheese. *If you want the enchilada sauce to be thicker, add one small can of tomato paste to the enchiladas sauce instead of the 8oz. can of tomato sauce. I just pour the sauce in a measuring cup with the tomato paste and stir. Then drizzle it over the tortillas making sure each tortilla is covered with enchiladas sauce. Place cut bell peppers of different color on top and garnish with sliced black olives. *My husband loves onions, and will sometimes add them to the recipe.
Bake, uncovered, at 350° for 15 minutes or until heated through. Yield: 6 enchiladas if using large tortillas.
