Simple & Healthy Pepper Rice by the Blueprint. Pepper rice is our favorite simple & healthy vegetable dish. It works great for a Sabbath meal that you can prepare the day before. Pepper Rice by the Blueprint is our take on my mom’s stuffed pepper recipe. We love to cook this in a large batch so we can take the next day off from cooking and eat leftovers. This is one of the few things we cook that probably tastes better after marinating for a day.
This is a simple, healthy pepper rice recipe that follows the blueprint laid out by God for healthy eating. Add more of the spices listed if it isn’t up to your taste. You can alter the ingredients, but remember not to mix fruits and vegetables (Yes, some consider tomatoes and peppers to be fruits). Mixing fruits and vegetables can cause indigestion especially for those with sensitive stomachs.
Ingredients
tofu extra firm 1 block
tomato Sauce 15oz x3
3 ¼ cups water (for cooking the rice)
3 cups of rice
1 can Rotel 10oz
2 bell peppers
2 Tbsp. parsley, italian spice or oregano
1 Tbsp. basil, Himalayan salt, garlic and onion powder
Options
You can use ¾ cup of chopped nuts instead of tofu.
Directions
I cook the pepper rice in one large soup pot to make it easier to stir and to serve later.
Drain the tofu and wrap in a towel with something heavy on it to remove most of the liquid. Be careful not to smash the tofu with too heavy of a weight.
Cut the tofu into squares about ½ inch each. Spread on baking sheet. Lightly season with garlic powder and onion powder. Bake for 30 to 45 minutes flipping every 15 minutes.
Cook the rice as per package directions or in an instant pot using the instant pot directions.
Saute the peppers with the spices.
Add the cooked rice, tofu squares, Rotel, and tomato sauce.
Simmer for at least 15 minutes.
The pepper rice is good the next day, so you don’t have to cook again. Just heat it up for a few minutes.
I don’t like to drain the mixed tomatoes and chilies (Rotel) as liquid increases the flavor of the pepper rice.
