Super-Easy, Tangy Vegan Cheezecake by the Blueprint
Super-Easy, Tangy Vegan Cheezecake by the Blueprint. Every so often, when I am craving a mouthwatering tasty treat this recipe comes to mind. Remember, I said “every so often” that means on special occasions when tastebuds are running rampant and when the ordinary just won’t do. This salivating dessert is great for when I just want to treat myself with something satisfying.
I would recommend making your pie crust. It is wonderful with a date and nut pie crust or a grape nuts pie crust. It makes up to two pies. You can freeze one for later use. This dessert is like tasting a little heaven on earth. When I use lime instead of lemon, it reminds me of a key lime pie. This dessert satisfies my sweets craving plus, I can I cut the frozen one into squares and serve it as a cool treat.
Ingredients
1- 8 oz container vegan cream cheese (We like Tofutti Better than Cream Cheese.)
1- 16 oz container of non- dairy whipped cream (We like vegan TruWhip.)
¾ – 1 lemon or lime juice (adjust to your taste)
¾-1 cup of raw cane sugar (adjust to your taste)
2 graham cracker pie crusts (or make from scratch)
Directions
Soften the vegan cream cheese.
Whip the cream cheese, tofu whipped cream, lemon juice and sugar together until smooth. You use a hand mixer, but putting everything in a good blender works well too.
The desired taste should be sweet, but tangy. Spoon evenly into one or two graham cracker or pastry pie crusts depending on how filled you want your pies. Keep refrigerated.
The cheezecake will freeze well and can be eaten at a different time.
You can substitute fructose for the cane sugar, or you can use honey or maple syrup as the sweetener. I am working on getting the same consistency with the liquid sweeteners as the solid ones provide. You can make your own pie crust from graham crackers or Grape-Nuts cereal. They both are tasty.
Grape-Nuts Pie Crust
Ingredients
2 cups of Grape-Nuts, crushed
1/2 – 3/4 cups of water (add more water if needed to cover the bottom and sides of one pan with crust)
You can also add a little sweetener to the crust mix if you prefer a sweeter crust.
Directions
You can crush Grape-Nuts, either by pulsing it in a blender or by gently crushing with a rolling pin.
Mix ingredients thoroughly.
Spread this over the bottom of the pie pan.
If the mixture is not enough, just mix up a bit more in the same proportions.
Place in the refrigerator for about 30 minutes and remove and add filling.
If you prefer baking it, follow the same steps above, then Bake at 350° for 10-12 minutes. Cool. Fill with filling. The cheezecake thickens while in the refrigerator.
