Simple & Healthy Shoepeg Salsa by the Blueprint

Simple & Healthy shoepeg salsa is one of our favorite snacks. Sometimes we eat it as a meal for dinner. It is a simple, healthy recipe that follows the blueprint laid out by God for healthy eating. Add more of the spices listed if it isn’t up to your taste after marinating for several hours to overnight.

You can alter the ingredients to your taste, but remember not to mix fruits and vegetables (Yes tomatoes and peppers are actually fruits). Mixing fruits and vegetables can cause indigestion especially for those with sensitive stomachs.

Ingredients

  • 2 cans (15 ounces each) black-eyed peas drained
  • 1 can (10 ounces) white shoepeg corn drained
  • 1 can mixed tomatoes and chilies (Rotel)
  • 1 green bell pepper diced
  • 1 tomato diced
  • 1/2 cup fresh lemon juice
  • 1 teaspoon of honey, Himalaya salt, garlic powder, paprika, oregano, basil, & parsley

Directions

Remember to drain the canned ingredients. I don’t like to drain the mixed tomatoes and chilies (Rotel) as liquid greatly increases the flavor of the salsa. You may have to scoop the salsa out with a slotted spoon to drain some of the liquid when serving.

Mix lemon juice, honey, and spices together and pour over beans and fruits (vegetables). Next mix everything together, I like to put the Simple & Healthy Shoepeg Salsa mixture in a bowl with a tight lid and shake it vigorously for several minutes. Finally, let the mixture marinate in the refrigerator for at least 1 hour before serving. For better flavor leave overnight.

Serve the Simple & Healthy Shoepeg Salsa hot or cold with healthy tortilla chips. I like to eat it with dairy free sour cream.
