Simple & Healthy Brownies by the Blueprint

Are you looking for an absolutely yummy treat? These vegan brownies are fat-free, wholegrain, and delicious. They are naturally sweetened with maple syrup and honey making them a mouthwatering healthy treat. Plus, they are easy to make and store well in the freezer!

Ingredients

¾ cup whole wheat pastry flour or substitute with ¼ cup oat flour and ½ unbleached all-purpose flour

¼ tsp salt

¼ cup unsweetened carob powder

2 teaspoons instant coffee substitute such as Roma or Cafix

4 tablespoons maple syrup

2 tablespoons water

1/2 cup honey

2 teaspoons pure vanilla extract (optional) *non-alcoholic kind

1 egg replacer or 1 tbsp flax meal (mix with 3 tablespoon water to make one flax egg)

½ cup walnuts (lightly toasted and coarsely chopped)

¼ cup vegan carob chips or peanut butter chips

Directions

Prepare an 8 X 8-inch baking pan by lining it with parchment paper. Leave an overhang on each side of the pan so you can easily lift the brownies out after they are baked.

Mix dry ingredients:  flour, coffee substitute granules, carob, and salt. Then add the wet ingredients: maple syrup, water, sugar, egg replacer mixture, and vanilla extract. Whisk together until well combined.

Stir in the walnuts and some carob chips. The batter should be thick. Line your pan with parchment paper that overhangs out the sides for easy removal. Then pour the batter into prepared pan and spread mixture out evenly. Sprinkle some carob chips over the top if you desire.

Bake the brownies in a preheated 350-degree oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Let the brownies cool thoroughly. After cooling, lift the brownies from the pan. Gently lift them out of the pan with the parchment paper and let cool. Cut brownies into squares and place on a nice dish. You may substitute carob chips or peanut butter chips for vegan powdered sugar sprinkled on top of the brownies.
