Simple & Healthy Roasted Pumpkin Seeds by the Blueprint

The best thing about carving a pumpkin is making roasted pumpkin seeds. There are many different techniques for seasoning and roasting pumpkin seeds, but this simple method is easy and healthy.

Roasted Pumpkin Seeds Directions

  1. Pre-heat oven. Pre-heat oven to 325 degrees Fahrenheit.
  2. Cut open the pumpkin. Use a large sharp knife to cut out the top of the pumpkin.
  3. Scoop out the seeds. Use your hand or a strong metal spoon to scoop as many of the seeds out of the pumpkin as you can. Be sure not to let the pulp dry before cleaning the seeds.
  4. Soak the seeds. Place the mass of seeds and pulp in a colander or large bowl. Run water over them and use your fingers to remove any noticeable bits of pumpkin. The flesh will separate more easily from the seeds this way.
  5. Boil the seeds. Simmer the clean seeds in salt water for 10-15 minutes. Boiling them in salt water infuses the salt in the seeds instead of leaving the salt on the surface. It also helps remove the last bits of pumpkin meat from the seeds. 
  6. Dry the seeds. Drain the boiled/cleaned seeds in a colander, and use a towel to dry the seeds as thoroughly as possible to ensure they get crispy when baked.
  7. Arrange the seeds. Spread on cookie sheet in a single layer.
  8. Add Salt. Sprinkle a little more salt over the seeds before putting in oven.
  9. Bake. Bake for about 45 minutes, or until golden brown. Check on your seeds every 10 minutes, removing the baking sheet, stirring, and flipping the seeds over as much as possible.
